Ingredients

  • 1 kg fresh gooseberries
  • 1 kg granulated sugar
  • 2 tablespoons lemon juice
  • 1/2 cup water

Instructions

  1. Prepare the gooseberries by washing and removing any stems.
  2. In a heavy-bottomed saucepan, crush the gooseberries lightly and add water. Simmer until they’re soft.
  3. Add sugar and lemon juice to the mix, stirring until the sugar dissolves.
  4. Bring the mixture to a boil and continue for 10-15 minutes until it reaches the setting point.
  5. Once the jam is set, remove from heat and let it cool slightly. Skim off any foam from the surface.
  6. Carefully ladle the jam into sterilized jars, then seal.

Notes

Ensure all utensils are clean and sterilized to prevent spoilage.

The setting point for jam is 105°C (221°F); using a thermometer could be helpful.

Lemon juice helps in setting and acts as a natural preservative.
