- 250 grams pasta (fusilli, penne, or farfalle)
- 1 cup finely shredded lettuce
- ⅓ cup cubed salami
- ⅓ cup cubed cheese (cheddar or mozzarella)
- 1 cup halved cherry tomatoes
- 1 cup chopped cucumber
- ⅓ cup sliced green olives
- 2 tablespoons olive juice
- ⅓ cup sliced pepperoncini (optional)
- Dressing ingredients (mayo, honey Dijon mustard, red wine vinegar, minced garlic, dry oregano, Italian seasoning, salt, pepper)
Instructions
- Cook pasta until al dente, rinse in cold water.
- Chop lettuce, cube salami and cheese, halve tomatoes, chop cucumber, slice olives and pepperoncini.
- Whisk together dressing ingredients.
- In a large bowl, combine pasta, veggies, cheese, and salami.
- Pour dressing over salad mixture and toss to coat.
- Refrigerate for an hour before serving.

Salad stays fresh for 3-4 days when refrigerated in an airtight container.
