Ingredients

  • 250 grams pasta (fusilli, penne, or farfalle)
  • 1 cup finely shredded lettuce
  • ⅓ cup cubed salami
  • ⅓ cup cubed cheese (cheddar or mozzarella)
  • 1 cup halved cherry tomatoes
  • 1 cup chopped cucumber
  • ⅓ cup sliced green olives
  • 2 tablespoons olive juice
  • ⅓ cup sliced pepperoncini (optional)
  • Dressing ingredients (mayo, honey Dijon mustard, red wine vinegar, minced garlic, dry oregano, Italian seasoning, salt, pepper)

Instructions

  1. Cook pasta until al dente, rinse in cold water.
  2. Chop lettuce, cube salami and cheese, halve tomatoes, chop cucumber, slice olives and pepperoncini.
  3. Whisk together dressing ingredients.
  4. In a large bowl, combine pasta, veggies, cheese, and salami.
  5. Pour dressing over salad mixture and toss to coat.
  6. Refrigerate for an hour before serving.

Notes

Salad stays fresh for 3-4 days when refrigerated in an airtight container.
