- 1 1/2 lbs boneless skinless chicken breasts
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 small white onion, diced
- 1 poblano pepper, diced
- 19 oz can green enchilada sauce
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1/4 cup sliced green onion
- 3 cups hot cooked white rice
Instructions
- Place chicken in the slow cooker; season with salt, pepper, chili, garlic, and onion powder.
- Add onion, poblano pepper, and enchilada sauce.
- Cook on low for 6-8 hours.
- Shred chicken, stir in sour cream, half the cheese, and green onions.
- Add rice, top with remaining cheese, and cook until cheese melts.
Notes
For a spicier version, add diced jalapeƱos.
Can be stored in the fridge for 3-4 days or frozen for later use.
