Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 small white onion, diced
  • 1 poblano pepper, diced
  • 19 oz can green enchilada sauce
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup sliced green onion
  • 3 cups hot cooked white rice

Instructions

  1. Place chicken in the slow cooker; season with salt, pepper, chili, garlic, and onion powder.
  2. Add onion, poblano pepper, and enchilada sauce.
  3. Cook on low for 6-8 hours.
  4. Shred chicken, stir in sour cream, half the cheese, and green onions.
  5. Add rice, top with remaining cheese, and cook until cheese melts.

Notes

For a spicier version, add diced jalapeƱos.

Can be stored in the fridge for 3-4 days or frozen for later use.
